Yak & Yeti Restaurant at Disney's Animal Kingdom Park...Dine at the foot of the Himalayas!

Without exception, no matter the mood or weather, every meal we’ve ever had at Yak & Yeti restaurant has been relaxing, energizing and enjoyable.  It’s an exotic Nepalese inspired restaurant in Disney’s Animal Kingdom. The walls are adorned with the “finds” of the owner.  He’s fallen on hard times and has had to turn his home into a hotel and restaurant. This is the story behind the restaurant.  Everything is perfection…from antiqued walls to the light fixtures.  If you’re one that loves an exotic and eclectic look, you’ll feel as though you’ve arrived home.

While Disney Dining Credits are accepted here, Yak & Yeti isn’t a Disney restaurant; it’s owned by Landry’s.  They accept Landry’s gift cards at this location. In full disclosure my husband rates it at mall food court status, but since I’m the one who has eaten more mall food, I completely disagree.   Sure, there’s nothing edgy about the food, but there is a variety.  You can choose pot stickers, Kobe burgers, Crispy Honey Chicken, or Malaysian Seafood Curry.  Not only is the curry Heavenly, it’s gluten free!

Our favorite table to ask for is a window view upstairs.  We’ve been happy to wait 15 or 20 extra minutes for one to become available.   Something about this location immediately relaxes you and the fact that you are in one of the most popular theme parks in the world just fades away. You are transported to an eatery at the foot of the Himalayan Mountains. Don’t believe me? Try it for yourself!

Tried and True Butterbeer Recipe...It's not like Diagon Alley but it's close!

If you are reading this, most likely you are dreaming about visiting Universal's Harry Potter delights, or you have returned and have trip melancholy.

I have the latter.  I recently returned from a wonderful trip to Universal Orlando. I had several glorious days walking around drinking Butterbeer in different forms, watching my 17 year old Witch cast spells with her similarly inclined magical friend after they chose their interactive wands, and lounging around the pool at the Hard Rock.

I'm home now.  And I wanted Butterbeer.

So I searched for recipes. Some of them are really detailed...boiling things, putting a dozen ingredients together. Not only am I impatient, but I also didn't want a grocery cart full of stuff just to make this treat.  So I took a basic recipe, threw it together in my way, and hit gold the very first attempt.

There are two kinds of non alcoholic Butterbeer at Universal...frozen and non. I prefer the non.  This recipe sort of mixes the two. Still drinkable, but a little colder and more solid than the non frozen at the parks.

Needed:

  • Vanilla Ice Cream (I used French Vanilla)
  • Cream soda (not diet, come on now)
  • Butterscotch topping (preferably in a squeeze bottle)
  • Blender
  • Straw (preferably a fat one)
  • Optional: Cool Whip or whipped cream
First, I microwaved the ice cream tub for 20 seconds to soften.  I used a tall fancy glass from Portofino Bay (why, oh why didn't I spring for a Hard Rock keeper cup on my trip, sniff).  Put three scoops of ice cream and about a cup of cream soda in a blender (this is how much of a slacker I am, I just tossed in the cream soda willy nilly, but I used to bartend and I'm often incapable of changing old habits).  Blend on the lowest level until most of the ice cream is blended, a few yummy lumps are acceptable.

Poor into cup, top with Cool Whip and swirly whirlies of butterscotch topping and THAT IS IT.  Drink up, Muggle.
